Avocado Gazpacho

Who doesn't like a fresh gazpacho? And avocado? Here's an exquisite recipe that will surprise you.
INGREDIENTS (for 4 people)
- 3 avocados at their point of ripeness.
- 1/2 cucumber.
- 1/2 zucchini.
- A piece of green pepper.
- 60 cl. of water.
- 50 cl of extra virgin olive oil.
- 30 grams of bread crumbs from the day before.
- 1 clove of garlic.
- splash of white vinegar
- salt
ELABORATION:
We put all the ingredients except the oil in a food processor and blend until a homogeneous mixture is formed. Now we will add the oil slowly so that the mixture emulsifies. To get the density that we like best we can play with the amount of water and/or bread crumbs.
We will keep it in the refrigerator until it is very cold.
Served without decoration, it is already an exquisite dish, but if we want to give it a more elegant or visual touch, we can accompany it with different garnishes. Hard-boiled egg and tuna. Diced tomatoes and rosemary flowers. Ham cubes. The truth is that it accepts an infinite number of "complements".
